Tina Tran, WMC’s Laboratory Technologist, celebrates her third anniversary of her second stint at the Wheat Marketing Center. She previously worked here from 1996-2005. Tina has a high level of proficiency in conducting the full range of wheat and flour analysis and is often called upon to explain the importance of each test to visitors. Wheat producers are always interested in seeing a demonstration of the Falling Number test and international visitors enjoy Tina’s explanation of the SRC, Alveograph, and other test equipment.
Tina is also a leading expert in making sponge cakes, which is the key product used to evaluate soft white wheat quality. While many tests are automated, making sponge cake relies on a precise technique of folding the ingredients together according to a prescribed method. Tina’s skills in the lab and her willingness to pitch in wherever needed make her a valued member of the WMC team.
