As we begin the month, Crop Quality testing and analysis is in full swing. Dozens of samples began arriving last week including hard red winter, hard red spring and soft white samples from Washington. During harvest the team concentrates on grading and testing samples for weekly crop quality reports. Visiting Scholar Shikhadri is in the final stages of her research spending most of the week in the bake lab. Later in the week we host visitors from SPC – a south Korean food company producing a wide range of baked goods and confections as well as a flour milling company. Our visitors will include former WMC technical director Gary Hou.
