Happy Independence Day! The WMC team returns this week from a long weekend and a productive week with the Korean baking team. In the bake lab work continues the mechanized cake study for Japanese sponge cakes. The team meets this week with Erica Oakley of U.S. Wheat Associates to finalize planning for harvest and crop quality testing which will begin later in the month. Visiting scholar Shikhadri Mahanta continues her research project to understand the effects of a novel technology called Atmospheric Cold Plasma as a clean label treatment soft wheat and hard wheat flours, and the impact on end-product quality.
