As the PNW harvest concludes, WMC processed over 612 Idaho, Oregon, and Washington samples for the annual crop quality survey. This week, the crop quality team continue making Soft White Wheat composites for milling and product testing, based on geographic zones and protein levels. For Hard White Wheat, they’ve focused on producing noodles and pan breads, while steamed bread and Japanese sponge cakes have been the focus for Soft White Wheat.  Once completed begins the testing and analysis of each end-product for the final printed report.
