Happy Valentine’s Day to all. The staff has a busy week planned with multiple projects focused on different aspects of end-product quality in bread, tortillas and sponge cakes. Andrew, for example, is baking sponge cakes with heat-treated flour as a possible substitute for chlorinated cake flour. Also this week, the Finance and Audit Committee meets to review year-to-date financial results and preparations continue for the March workshops and board meeting. Brent is leading the annual spring cleaning effort as part of getting ready for lots of visitors.
