After returning from the long holiday weekend, the technical team dedicates much time in the Bake Lab to work on different ciabatta and pan bread formulations for a proprietary client. Bon prepares for his work travels to Japan additional sponge cake technical training. While there, he will meet with Nippn, Nisshin, and USW Japanese office.
